Tasting Notes

Bursting with red and black fruits—red cherry, ripe plums, black raspberry—and floral notes balanced by red licorice, chocolate, and star anise with a long lingering fruit finish and a soft chocolate-velvet texture. Pair with slow-roasted meats, BBQ lamb, grilled sausage and onions, garlic-based dishes, yellow curry dishes, lentils, charcuterie. Brie, ricotta, pecorino, and blue cheese for cheese pairings.

Winemaker's Notes

The 2017 Malbec was produced from grapes grown in the San Antonio Valley grown by Pierce Ranch Vineyards. The wine was fermented in one ton, open top fermenters with different yeast strains used in each batch to add complexity and promote varietal characteristics. The skins were punched down into the must by hand one to three times per day. Fermentation took place over an 8 to 14 day period. The fermentation lots were separated throughout barrel aging which took place in 225 liter oak barrels (20% new oak) them blended prior to bottling unfined and unfiltered.
